Recipe: Crispy Cakes

Oh my goodness – how much fun can we have with a bag of our Granola??  As a kid, and in truth, throughout my adult life I have loved Crispy Cakes.  The original recipe involves melting cooking chocolate and mixing through cornflakes.  I used to love Crispy Cakes so much that sometimes I would just eat the mix warm straight out of the bowl instead of waiting for it to set!

When I cleaned up my diet, there was no way I could make Crispy Cakes anymore, there are after all, just grains, sugar and dairy.  Sigh.  I tried making them with coconut flakes – but it just wasn’t the same.

At Easter, I used to make Crispy Cakes and put in mini chocolate eggs – like a birds nest.  It was a bit of a tradition.  One year even though I was eating primally, I decided: ‘what the heck – I’m going to make some anyway!’  It was very disappointing!  My tastebuds had changed so much that I could taste the Crispy Cakes for what they really were – rubbish!

So I thought I had had my last Crispy Cake – until today my friend!!!!

I recently made some Muesli Bars with our Granola – did you see that recipe?  It went viral!  Finally!  A healthy Muesli Bar that can go in the school lunchboxes.  It’s been my cup of tea and something yummy treat each night.  I made them with honey and they reminded me of Honey Joys – an Australian birthday party treat made from honey and cornflakes.

Today I had the inspiration to chuck in a bit of cacao to the Muesli Bar Recipe and see if I could replicate my long lost Crispy Cake!  And SUCCESS!!

This recipe makes 32 mini Crispy Cakes. One mini Crispy Cake is such a satisfying little treat, but really, give me one reason you wouldn’t have a big one?  Our No Nut Hemp Granola is super low carb as it doesn’t contain nuts.  This recipe is adding more good fats with the coconut oil, an extra serve of antioxidants with the cacao and I used 1/4 cup of honey, which over so many cakes is very little sweetener at all.  Seriously yum!  You can enjoy these fun little treats and feel like you’ve raided the birthday party table – but without the sugar crash and bloat!  Winning.

You could also make this by simply melting some good quality dark chocolate, then mixing the No Nut Hemp Granola through.

Ingredients

  • 4 cups of Primal Alternative No Nut Hemp Granola
  • 1/2 cup coconut oil (I use refined so it doesn’t taste of coconut)
  • 1/4 cup honey or maple syrup or sweetener of your choice
  • 40g cacao (or carob) – I am a cacao lover, so you may want to start with a less amount?

Method

  1. Gently melt the coconut oil, sweetener and cacao together
  2. Mix through the No Nut Hemp Granola and stir well to combine
  3. Put teaspoons of the mixture into small patty pans (muffin papers).
  4. Pop in the fridge until set, store in the fridge.
